You have at least two problems:
Windows 7
and
a Touch Screen monitor.
Both of these are radically changed technologies from what you are used to.
I don't have a Touch screen, so you might have to read the manual on that one.

Win 7 uses Libraries instead of the old file structure. The old structure is still there, but Win7 is trying to make it easy for you (and apparently failing)
Windows Explorer is still there in Programs, Accessories, but you'll have to read the manual to find out how to get there.
Or maybe you can take the computer back and get something more normal?
